I would recommend something other than drywall for the walls. It's easily damaged and absorbs moisture.
I've got steel panels in my shop. It costs more and maybe not to code for painting areas, but it's sturdy, it's white, and I can wash and detail all in the same area without getting gypsum board soaked.
Exhausting thru the ceiling, while doable, is not ideal. Paint fumes tend to sink down, so a fan in a wall is better. Some guys also set theirs up as positive pressure. A fan (in wall or celing) PUSHES air into the paint area, and some filters in a wall allow the fumes to exit in another location.
