Has anyone restored a late 80s early 90s Chevy stepside truck?
I'm looking to strip out the interior and replace with mid 90s Blazer or
Suburban seats, power preferably. I'm curious as to how difficult the
changeover will be.

I would measure the length and width seats and their feet to make sure they will fit in the space and if so go for it. You may need to shim or shorten the legs but as long as they fit in the space it shouldn't be too difficult.
