We do it all the time...
The important thing is to prepare the block and accessories properly (clean, degrease and take care of rust...) then a good epoxy primer (I use PPG's DP) and then the SS...( I much prefer Concept urethane...covers better).
You can even do basecoat/clear coat on engines, I even did Kandy jobs on blocks...
The secret is in the prep...

I had always figured the same...engine block/heads would be too hot for normal automotive finishes.
Then again, try to place your bare hand on the hood of a black car in the summer, (especially here in SW Florida).
