I'm planning out my next paint job and I'm looking for some ideas on creating a
deep looking shine. Would it work out the best to lay down 2 coats of clear and
let it dry. Color sand it with 1000 grit and then lay down 2 more coats of clear.
Once that driers, do a normal color sand and buff to finish it out? Would this process
be the right method to get the results I'm looking for?

Use a "good" clear, apply two or three coats then sand and polish. If you're going to sand and polish after your clear is applied it won't make any difference in the appearance if you do it after your first or your second application. The quality of the clear makes a difference especially as the finish ages.
